Who said a burger had to be complicated? It doesn’t, sometimes simpler is better.
Fire up your grill. Make sure it is set to high. When your grill is at its hottest temp, turn it down to medium and throw your burgers on. You should hear a satisfying sizzle when the meat hits the grates. Cover the grill and cook each side for 5 minutes, turning only once. During the last 2 minutes put your cheese on.
* Before placing your burgers on the grill, press your thumb in the center of each burger. This is the secret to cooking awesome backyard burgers. By pressing your thumb and creating a ‘bowl’ you are allowing the fibers to fill the ‘bowl’ and expand into a flat burger. If you don’t create a ‘bowl’, the fibers would have nothing to fill and would expand the entire burger into a ball.
- 2 pounds ground beef (80% lean / 20% fat)
- Smoked gouda cheese

- Salt & Pepper
- Preheat your grill to high.
- Form the ground beef into 8 patties.
- Gently press your thumb into the center of each patty.
- Season with salt & pepper.
- Grill for 5 minutes per side.
- During the last 2 minutes, add the cheese.
